Toasted wholemeal chickpea flour
This product is useful when pulses are to be added to a certain recipe, without changing the flavour of the final product too much (generally pasta or baked goods). As with other pulses, the seeds are heat-treated at different temperatures and times depending on the client’s needs. However, all processes are aimed at removing the grassy flavour of pulses that some clients find unappetizing, increasing the product’s shelf life, and sanitising it.
Heat treatments, always applied to meet the needs of each specific client, can go as far as characterizing the semi-finished product with hazelnut notes, enriching the taste and fragrance of the finished product. Subsequently, the seeds are cryo-milled or cryo-micronized.
