Toasted green pea bran flour

A semi-finished product that is high in fibre, toasted pea bran flour is useful in products aiming for the ‘high in fibre’ nutritional claim – one that has gone from niche market to one of the most popular globally – as well as in finished products where a ‘rustic’ effect is desired. It is often used in leavened baked goods.

To get high-quality bran, the heat treatment used must not only stabilize the product, but also zero the total and specific bacterial load, and increase the fibre content by reducing the water content. The next step is calibrated milling with liquid nitrogen.
