New gluten free pulse fibers
CerealVeneta offers new fibers, selected and derived entirely from decorticated peas, chickpeas and lentils
The fibers are heat-treated and physically conditioned to variable particle sizes ranging from 300 μ to 3000 μ.
These processes provide the product with high-quality organoleptic and functional characteristics in which the dietary fiber content has values close to 50% of the total dietary fiber.
The fiber’s very low humidity (variable from 3% to 10%) content adds further value to the product, as well as unique sensorial and color qualities given by the applied thermal process, which also allows to reduce the bacterial charge, leaving the quantities of micro and macro mineral elements intact.
Their characteristics make them ideal in all those applications where it is required to make claims such as, “source of fiber” or “high fiber”, as the average content of dietary fiber varies from 60 to 90%. Moreover, their structure and consistency is ideal for obtaining “artisanal” and “rustic” products in order to enhance their visual appearance. The applications can be variable, from the bakery and pasta sector; more and more oriented towards providing high value-added products, the pellet sector, to the dietary supplements and pharmaceuticals sector.
